insalata caprese

My very favourite salad which we ate everywhere when we went to Italy.  Because it is so simple you must make sure the ingredients are all really fresh and good quality.  The tomatoes should be really tasty and ripe (don't keep them in the fridge).  Buffalo mozzarella is of course best but any other good quality fresh mozzarella will do.




 4 large ripe tomatoes
 1 pound fresh mozzarella cheese
 1/2 cup fresh basil leaves
 3 tablespoons extra virgin olive oil
 fine sea salt to taste
 freshly ground black pepper to taste

Slice the tomatoes, slice or break up the mozzarella and put in a large, flat serving dish.  Sprinkle over the basil leaves and the olive oil and season to rase with salt and pepper.

You can serve with some balsamic vinegar on the side.
