Pamplemousse cocktail


I found this recipe on epicurious.com and it’s name seemed so appropriate for this book (as it also contains pomegranate juice) that I just had to make it.  Be warned - it’s very moreish and packs a bit of a punch.


Pamplemousse cocktail

Makes 6 cocktails

ingredients

7 tablespoons water
5 tablespoons pomegranate juice
1/4 cup sugar
4 teaspoons honey
1 1/2 cups vodka
3/4 cup fresh grapefruit juice
1/4 cup fresh lime juice
18 fresh mint leaves plus 6 sprigs for garnish
soda water to taste
Ice cubes

preparation

Bring the first 4 ingredients to boil in small saucepan, stirring to dissolve the sugar. Cool. (Can be made 1 day ahead). Cover and refrigerate.

Combine the pomegranate mixture, vodka, grapefruit juice, lime juice, and mint leaves in a large jug. Fill the jug with ice and soda water to taste (undiluted it is a bit sweet for my tatse), and stir vigorously. Pour into Martini glasses. Garnish each glass with mint sprig and serve.
